Sizzling Prawns With Ginger

stirfry - other, shrimp

3 tablespoons vegetable oil
1 medium onion; chopped
1 1/4 pounds prawn tails; shelled and deveined
1 small red bell pepper; julienned
1 small yellow bell pepper; julienned
1 serrano pepper; seeded and chopped fine
5 cloves garlic; chopped fine
1 tablespoon finely chopped fresh ginger
3 tablespoons soy sauce
2 tablespoons dry sherry
1/4 cup chopped fresh cilantro

In large wok, heat oil over high heat. Add onion; stir-fry for 1 minute. Add prawns, red and yellow bell peppers, serrano pepper, garlic and ginger; stir-fry for 3 minutes. Add soy sauce and sherry; cook for 1 minute, stirring constantly. Stir in cilantro. Nibble on some Indonesian shrimp crackers while you prepare steamed rice and a simple vegetable stir-fry for a satisfying dinner. Bok choy, with its contrasting green and white stalks, is a good choice.
