Shrimp Pizza w/Mustard, Cheese, Dill & Caramelized Onion

4 medium onions
3 tablespoons olive oil
1/4 cup sweet whole-grain mustard
2 12-inch unbaked pizza crusts; OR
2 12-inch Italian-style bread shells
1/2 pound cooked shrimp
1/2 cup coarsely chopped fresh dill
5 ounces goat cheese; crumbled
pepper

Cut onions in half lengthwise, then cut each half crosswise into thin slices. In large frypan, heat oil over medium-high heat. Add onions and sauté for 3 minutes. Reduce heat to medium-low and continue cooking for 15 minutes or until onions are golden brown, stirring occasionally. For each pizza, spread half the mustard evenly over unbaked pizza crust or bread shell. Top with half the caramelized onions, shrimp and dill, then half the goat cheese. Sprinkle lightly with pepper. If using home-made dough, bake at 500şF for 8 minutes, then slide pizzas from pans directly on to oven rack; bake an additional 1 to 2 minutes or until bottoms of crusts are crisp and golden. (On bread shells, bake at 450şF for 10 minutes.) Add a green salad, and dinner's ready.
