Grilled Dijon Herb Pork Chops With Garlic Sweet Potato Fans bbq, pork, potatoes 1/4 cup Dijon Mustard 2 teaspoons olive oil 2 cloves garlic; minced 1/4 teaspoon (each) salt, pepper and dried thyme 1/4 teaspoon dried rosemary; crumbled 4 pork loin chops; 1/2 to 3/4 inch thick ----Garlic Sweet Potato Fans---- 4 small sweet potatoes 2 tablespoons olive oil 2 cloves garlic; minced 1/2 teaspoon salt 1/4 teaspoon pepper In shallow glass dish, whisk together mustard, oil, garlic, salt, pepper, thyme and rosemary. Add chops, turning to coat; let stand for 15 minutes. Place chops on greased grill or in grill pan over medium-high heat; close lid and cook, turning once, for 8 to 10 minutes or until juices run clear when chops are pierced and just a hint of pink remains inside. Garlic Sweet Potato Fans Scrub sweet potatoes; cut crosswise two-thirds through into 1/4-inch (5 mm) thick slices. Place in microwaveable dish, cover and microwave at High for 8 minutes or until almost tender. Meanwhile, whisk together olive oil, garlic, minced, salt and pepper. Place potatoes on grill over medium high heat; close lid and cook, turning once, for 10 minutes or until tender. Brush with garlic mixture to serve. Serve with grilled vegetables.
