Grandma's Chocolate Pie

1 9-inch baked single-crust pie shell
----Filling----
1 cup granulated sugar
1/2 cup all-purpose flour
1/3 cup cocoa powder
1/2 cup cold water
2 cups boiling water
1/4 cup butter
1 teaspoon vanilla
1/2 cup whipping cream

Filling: In heavy saucepan, whisk together sugar, flour and cocoa. Whisk in cold water until thick paste forms. Gradually whisk in boiling water. Cook over medium heat, stirring often and scraping bottom of pan to prevent scorching, for about 10 minutes or until mixture is bubbling and thickened. Remove from heat. Stir in butter and vanilla until butter is melted. Pour into prepared shell. Refrigerate for about 2 hours or until set. Whip cream; pipe or spoon on top of pie. Variations Mocha Pie: Replace boiling water with 2 cups hot coffee. Chocolate Orange Pie: Replace 1/2 cup of the boiling water with orange juice. Tip: For a double-chocolate pie filling stir in 2 ounces chopped semisweet chocolate with the butter and vanilla.
