Chewy Chocolate Chip Cookies

1 cup butter; softened
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 eggs
1 tablespoon vanilla
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips

Place oven rack in centre of oven; turn on heat to 350°F. With pastry brush and a little shortening, lightly grease 2 rimless baking sheets; set aside. Place softened butter in large bowl. With electric mixer, beat at high speed until fluffy and light coloured. Add brown sugar and granulated sugar; beat until mixture is even fluffier. Break 1 of the eggs into small bowl and add to batter; beat until blended. Break second egg into small bowl; add to batter along with vanilla and beat until smooth. In separate bowl, whisk together flour, baking soda and salt; pour half over batter. With wooden spoon, mix until no streaks remain. Stir in remaining flour mixture. Sprinkle with chocolate chips; stir until well distributed. Scoop dough by rounded tablespoonfuls and drop onto prepared baking sheets, leaving 2-inch space between cookies. Bake, 1l sheet at a time, for 8 to 12 minutes or until cookies are golden around edges and underneath. Wearing oven mitts, remove baking sheet from oven and set on rack to let cool for 2 minutes. With lifter, lift cookies off baking sheet and set in single layer on rack to let cool completely. Repeat with remaining baking sheet of dough. Let first sheet cool completely before adding more dough so dough doesn't melt. Add-Ins: Try adding 1 cup flavoured chips, such as peanut butter, butterscotch, chocolate mint or chocolate raspberry, and 1 cup toasted pecans or walnuts to the dough. Tip: For a fresh baked flavour, warm in the microwave.
