Asparagus With Lime vegetables 2 pounds asparagus; trimmed 2 tablespoons olive or vegetable oil 1 teaspoon grated lime rind 2 tablespoons lime juice 2 teaspoons liquid honey 1/4 teaspoon salt pinch pepper 1 tablespoon (each) chopped fresh mint and chives 2 tablespoons diced sweet red pepper In large skillet, simmer asparagus in salted water for 6 minutes or just until tender. Drain on towels; transfer to platter. Whisk oil, lime rind and juice, honey, salt and pepper; stir in mint and chives. Drizzle over asparagus; garnish with red pepper.
