Orzo And White Bean Soup With Double Tomatoes soups 1 tablespoon vegetable oil 1 medium onion; chopped 2 cloves garlic; chopped 1 can (14-oz) stewed tomatoes 4 cups vegetable stock 2 tablespoons sun-dried tomatoes (packed in oil); drained and chopped pinch dried crushed hot red pepper 1/2 cup orzo (rice-shaped pasta) 1 can (19-oz) white kidney beans; drained and rinsed salt and pepper grated Parmesan cheese In large heavy saucepan, heat oil over medium heat. Add onion and garlic; sauté for 4 minutes or until onion is tender. Add tomatoes, stock, sun-dried tomatoes and dried red pepper; bring to a boil. Add orzo and simmer about 12 minutes or until pasta is tender, stirring occasionally. Add beans and heat through. Add salt and pepper to taste. Serve sprinkled with cheese. Add a green salad and a loaf of bread for a satisfying meal.
