Penne With Tomato And Brie (2)

2 cups penne pasta
1/2 cup Hidden Valley original ranch creamy
salad dressing
2 large tomatoes; coarsely chopped
1 clove garlic; minced
2 tablespoons chopped fresh basil; or
1 teaspoon dried
1/4 teaspoon pepper
6 ounces Brie cheese

Cook penne according to package directions. Meanwhile, combine dressing, tomatoes, garlic, basil and pepper. Remove as much rind from Brie as possible and discard. Coarsely chop Brie and stir into tomato mixture. Drain penne, return to saucepan. Add tomato mixture and heat over medium heat, stirring just until cheese melts. Tip: Instead of Brie, substitute mozzarella cheese.
