Honey Citrus-Glazed Chicken chicken - breast 1 seedless orange 1/2 lemon 1/4 cup Dijon mustard 1/4 cup liquid honey 4 chicken breasts With zester or grater, remove outer rind from orange and lemon; squeeze and strain juice. In large glass dish, combine orange and lemon rind and juice, mustard, honey and 1/4 teaspoon pepper. Set aside. With gentle tugging motion, pull skin from chicken; discard. Add chicken to dish, turning to coat all over. Cover and refrigerate for at least 4 hours or for up to 24 hours, turning occasionally. Reserving marinade, arrange chicken, meaty side down, on foil- lined rimmed baking sheet. Spoon some of the marinade over top. Bake in 375şF oven for 20 minutes. Turn chicken and brush with remaining marinade; bake, basting with pan juices 3 or 4 times, for 10 to 20 minutes longer or until golden brown and juices run clear when chicken is pierced. Serve with pan juices. Per serving: about 230 calories, 29 g protein, 2 g fat, 23 g carbohydrate.
