Plum-Glazed Pork Loin

2 tablespoons (each) soy sauce and lime juice
2 teaspoons minced gingerroot
2 cloves garlic; minced
1/2 teaspoon pepper
3 pounds pork loin centre-cut roast; (single loin)
1/4 cup plum sauce or apricot jam

In glass bowl, whisk together soy sauce, lime juice, minced ginger, minced garlic and pepper. Add roast, turning to coat. Cover and refrigerate for 8 hours. (Make ahead: Refrigerate for up to 24 hours, turning occasionally.) Reserving marinade, place roast on greased grill over medium heat; brush with reserved marinade. Close lid and grill, fuming occasionally, for 11h hours. Brush with plum sauce; grill, turning occasionally, for 10 minutes or until thermometer inserted in centre registers 160°F and just a hint of pink remains inside. Transfer to cutting board. Tent with foil; let stand for 10 minutes before carving.
