Warm Cheddar Dip appetizers, cheese, dips 1/2 cup apple cider or apple juice 2 slices onion 6 peppercorns 3 cups shredded old Cheddar cheese 1 tablespoon cornstarch 1/2 teaspoon dry mustard pinch nutmeg apple wedges This crowd-pleasing dip can be made the day before and refrigerated, then reheated on the stove or microwaved at Medium - High (70%) for 3 to 4 minutes or until heated through, stirring twice. Set on a warmer on the table. In saucepan, bring apple cider, onion and peppercorns to boil; reduce heat, cover and simmer for 5 minutes. Discard onion and peppercorns. Toss together cheese, cornstarch, mustard and nutmeg; add by cupfuls to cider, whisking over medium heat until cheese is melted before adding next batch. Whisk until smooth and just comes to boil.
