Wild Rice And Apple Pudding desserts, fruits, rice, puddings 1/4 cup wild rice; rinsed and drained 1 1/2 cups milk 1 cup whipping cream 1 apple; peeled and diced 1/3 cup raisins 1/3 cup arborio or other short-grain rice; rinsed and drained 1/4 cup maple syrup 1 tablespoon unsalted butter; melted 1/2 teaspoon grated gingerroot pinch (each) salt and ground nutmeg pinch saffron threads; crumbled 1/4 cup sugar or demerara sugar In small saucepan, bring 1 cup water to boil. Add wild rice; reduce heat to medium-low. Cover and cook until tender, about 40 minutes. Drain. In greased 6-cup casserole, stir together wild rice, milk, cream, apple, raisins, arborio rice, maple syrup, butter, ginger, salt, nutmeg and saffron. Bake in 300°F oven until arborio rice is tender and liquid is absorbed, about 2 hours. Sprinkle with maple sugar; broil 6 inches from heat, rotating dish, until sugar is evenly melted and golden brown.
