Phillv Cheese Melts sandwiches, beef - other, cheese 2 teaspoons vegetable oil 1 pound beef stir-fry strips 1 onion; sliced 1/2 sweet red pepper; sliced 1 cup sliced mushrooms 1/2 teaspoon dried thyme 1/4 teaspoon salt 1/4 cup light sour cream 4 small panini buns 1 cup shredded mozzarella cheese 1 tablespoon chopped fresh parsley In large skillet, heat oil over high heat; stir-fry beef, in batches, for 2 minutes or until browned. Transfer to plate; cover to keep warm. Add onion to pan; cook over medium high heat, stirring often, for 5 minutes or until beginning to colour. Add red pepper, mushrooms, thyme and salt; cook, stirring often, until no liquid remains. Remove from heat. Stir in sour cream and beef. Meanwhile, cut buns in half and place, cut side up, on baking sheet; broil until toasted. Top bottom halves with meat mixture; sprinkle with cheese and parsley. Broil for 2 minutes or until cheese melts. Sandwich with tops of buns. Serve with vegetable sticks and salsa dip TIP: Create different flavours just by changing the cheese. Instead of the mild mozzarella, try bolder Gruyčre, Cheddar, Monterey Jack or Gouda, either alone or in any combination.
