Old-Fashioned Egg Biscuits

breads

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup shortening; cubed
2 eggs
2/3 cup milk
----Glaze----
1 egg; lightly beaten

In large bowl, whisk together flour, baking powder and salt. With pastry blender or 2 knives, cut in shortening until mixture is in coarse crumbs. Whisk eggs with milk; pour into flour mixture all at once, tossing with fork until ragged dough forms. Turn out onto floured surface; knead 3 or 4 times. Pat into 1/2-inch thick 9-inch round. With 2 1/4-inch round cookie cutter, cut out circles, rerolling scraps. Place 2 inches apart on flour-dusted or parchment paper-lined rimless baking sheet. Glaze: Brush egg on tops. Bake in centre of 450°F oven for about 12 minutes, or until puffed and bottoms are golden.
