Northern Thai Sauce beef - other, pork, thai, sauces 1 teaspoon dried shrimp 1 small shallot; minced 2 birdseye chili; sliced 2 teaspoons finely grated lemon rind 1 tablespoon vegetable oil 1 clove (large) garlic; chopped 8 ounces lean ground beef 8 ounces lean ground pork 1 1/2 cups canned tomatoes; drained 1 tablespoon fish sauce 2 teaspoons sugar 2 teaspoons lime juice Using mortar and pestle grind together dried shrimp, shallot, chilies and lemon rind. In skillet, heat oil over medium-high heat; stir-fry garlic for 30 seconds. Add shrimp mixture; stir-fry for 30 seconds. Add beef; stir-fry for 3 minutes or until no longer pink. Add tomatoes, fish sauce, sugar and lime juice; bring to boil. Reduce heat and simmer for 20 minutes or until medium-thick consistency. Serve sauce with handful of sticky rice.
