Mom's Meat Loaf beef - ground 1 large white onion 2 stalks celery 1 carrot 2 teaspoons canola oil 3 eggs 1 1/4 pounds lean ground beef 1 1/2 cups dry bread crumbs 2/3 cup ketchup 1 tablespoon garlic powder 1 tablespoon Worcestershire sauce 3/4 teaspoon dried thyme 3/4 teaspoon (each) salt and pepper In food processor, finely mince together onion, celery and carrot. In skillet, heat oil over medium heat; cook minced vegetables, stirring occasionally, until tender, about 5 minutes. Let cool. In large bowl, lightly beat eggs. Mix in beef, bread crumbs, ketchup, garlic powder, Worcestershire sauce, thyme, salt and pepper. Add cooked vegetables and combine. Pack into 8- x 4-inch (6 cup) loaf pan; cover with foil. Place pan in larger pan; pour in enough hot water to come 1 inch up sides. Bake in 350°F oven for 1 hour. Remove foil; bake until browned and meat thermometer registers 170°F, about 40 minutes longer.
