Kale With Apple And Onion vegetables, curry 1 bunch kale; 8 ounces 1 apple 1 tablespoon vegetable oil 1 onion, sliced 1 teaspoon curry paste 1/2 cup vegetable or chicken stock pinch (each) salt and pepper Trim off stems and ribs from kale. Chop leaves coarsely and set aside. Peel and cut apple into 1/4-inch thick slices. In large shallow Dutch oven, heat oil over medium-high heat; cook onion until golden, about 3 minutes. Add apple and curry paste; cook until apple is almost tender, about 2 minutes. Add reserved chopped leaves, stock, salt and pepper; cover and cook, stirring occasionally, until kale is tender and most of the liquid is evaporated, about 5 minutes.
