Crispy Italian Wings

2 1/2 pounds chicken wings
----Coating----
1 cup fine fresh bread crumbs
1/4 cup grated Parmesan cheese
2 cloves garlic; minced
1 teaspoon dried oregano
1/4 teaspoon (each) salt and pepper
1 egg
2 tablespoons water

Remove tips of chicken wings and save for stock; cut wings in half at joint. Coating; In shallow dish, mix together bread crumbs, Parmesan cheese, garlic, oregano and salt and pepper. In another shallow dish, beat 1 egg with 2 tablespoons water. Dip wings into egg mixture; roll in bread crumb mixture to coat. Place wings on rimmed greased foil lined baking sheet. Bake in 500°F oven, or broil in centre of oven, taming once, until juices run clear when chicken is pierced, 20 to 25 minutes.
