Caroline's Healthy Loaves chicken - other, beef - ground 2 eggs 1 onion; grated 1 cup dry bread crumbs 1/2 cup chopped squeezed-dry thawed spinach 1 can (19 oz) stewed tomatoes 3/4 teaspoon salt 1/2 teaspoon (each) dried oregano and pepper 1 pound lean ground beef 1 pound lean ground turkey or chicken 2 tablespoons tomato paste In large bowl, mix together eggs, onion, bread crumbs, spinach, 1/2 cup of the tomatoes, salt, oregano and pepper. Mix in beef and turkey. Pat into 2 greased 8- x4-inch (6 cup) loaf pans. Stir tomato paste into remaining tomatoes; pour over loaves. Bake in 350°F oven for 1 hour or until meat thermometer inserted in centre of loaf registers 180°F.
