Broccoli Scramble Quesadillas

1 tablespoon butter
1 cup chopped broccoli
3 eggs
1/4 teaspoon (each) salt and pepper
2 large flour tortillas
1/2 cup shredded Cheddar cheese
1/3 cup salsa

In nonstick skillet, melt butter over medium heat; cook broccoli until heated through, about 4 minutes. Meanwhile, in bowl, whisk together eggs, salt and pepper; add to broccoli and cook until beginning to set, about 1 minute. Gently draw spatula across bottom of pan to form large, soft curds; cook until eggs are thickened and moist but no visible liquid remains, about 2 minutes. Place 1 tortilla on rimmed baking sheet. Top evenly with egg mixture. Sprinkle with 1/3 cup of the cheese then remaining tortilla. Sprinkle with remaining cheese. Broil until cheese is melted. Cut into wedges; serve with salsa.
