Cajun Potato Salad salads, potatoes, sausage 6 new potatoes; about 2 pounds 2/3 cup light mayonnaise 2 tablespoons cider vinegar 2 tablespoons Dijon mustard 1/4 teaspoon hot pepper sauce 1/4 each salt and pepper 1/2 cup chopped celery 1/2 sweet green pepper; chopped 3 green onions; chopped 2 cups smoked sausage, e.g. kielbasa; sliced (4 oz) optional In large pot of boiling salted water, cover and cook 6 new potatoes (about 2 pounds), scrubbed (or peeled if desired), for 18 to 20 minutes or until tender. Drain and let cool; cut into 3/4-inch cubes. In large bowl, whisk together dressing in mayonnaise, cider vinegar, Dijon mustard, hot pepper sauce and salt and pepper. Add celery, green pepper, onions and cubed potatoes. If desired, add smoked sausage. Toss to combine.
