Grilled Pickerel With Fresh Tomato Salsa fish, bbq 1 whole pickerel or steelhead trout; cleaned and scaled 1/4 teaspoon (each) salt and pepper 4 lemon slices 2 sprigs dill 1 tablespoon vegetable oil ----Fresh Tomato Salsa---- 2 plum tomatoes; chopped 1/2 cup diced cucumber 1/4 cup chopped sweet onion; Vidalia or Spanish 2 tablespoons chopped fresh oregano or parsley 2 teaspoons lemon juice 1/4 teaspoon salt pinch pepper Fresh Tomato Salsa: In bowl, toss tomatoes, cucumber, onion, oregano, lemon juice, salt and pepper; set aside. Sprinkle cavity of fish with half each of the salt and pepper. Arrange lemon slices and dill inside; skewer closed. Brush outside offish with oil; sprinkle with remaining salt and pepper. Place fish on greased grill over medium heat; close lid and grill, turning once, for about 30 minutes or until fish flakes easily when tested. Serve with salsa.
