Linguine With Shrimp And Tomato pasta, tested, shellfish, shrimp 1/4 pound linguine or whole-wheat noodles 1 tablespoon vegetable oil 1 clove garlic; minced 2 tablespoons finely chopped shallots 2 large tomatoes; coarsely chopped 1/4 teaspoon dried basil; or fresh chopped basil 1/2 pound small or medium shrimp 2 green onions; chopped salt freshly ground pepper In a large pot of boiling water, cook linguine until al dente (tender but firm) or according to package directions; drain. Meanwhile, in heavy skillet, heat oil over high heat. Add garlic and shallots; cook, stirring, for about 30 seconds. Add tomatoes and basil; cook, stirring, for about 1 minute. Add shrimp and cook, stirring, until shrimp are hot and, if using raw, they turn pink. Sprinkle with green onions and season with salt and pepper to taste.
