Leek and Goat Cheese Quiche cheese, eggs, pastry 1 tablespoon butter or olive oil 1 large leek, white and light green parts; chopped 4 eggs 1 1/4 cups cream or milk 1 teaspoon salt 1/2 teaspoon pepper 1 tablespoon chopped fresh thyme; or 1 teaspoon dried thyme 1 9- or 10-inch pie shell; partially baked 1 cup crumbled goat cheese Heat butter or oil in large deep skillet. Add leeks and cook gently about 15 minutes until wilted and tender - about 15 minutes. Cool. In large bowl whisk eggs with cream, salt, pepper and thyme. Line pie crust with cooled leeks and top with crumbled goat cheese. Pour egg mixture over top. Bake in preheated 375şF oven for 35 to 40 minutes until custard is set and browned on top.
