Spinach and Cheese Quiche vegetables, cheese, eggs, pastry 1 tablespoon butter or olive oil 1 small onion; chopped 2 cloves garlic; finely chopped 1 package (10 oz) chopped frozen spinach; defrosted, squeezed dry 4 eggs 1 1/4 cups sour cream or milk 1 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon nutmeg 1 9- or 10-inch pie shell; partially baked 1 cup grated Swiss cheese; or crumbled blue cheese Heat butter or oil in large deep skillet. Add onions and garlic. Cook gently about 15 minutes until tender - about and fragrant. Add chopped spinach and cook until dry. Cool. In large bowl whisk eggs with cream, salt, pepper and nutmeg. Stir in spinach and most of cheese. Spoon mixture into crust and sprinkle mixture with remaining cheese. Bake in preheated 375ºF oven for 35 to 40 minutes until custard is set and browned on top. Cool 10 minutes before serving.
