Shrimp Scampi With Fettucccine pasta, shrimp 1 1/2 pounds uncooked medium shrimp; unshelled 2 tablespoons olive or vegetable oil 1 tablespoon fresh parsley; chopped 2 tablespoons lemon juice 1/4 teaspoon salt 2 medium green onions; sliced thin Parmesan cheese; grated (optional) 8 ounces uncooked fettuccini; cooked Peel shrimp, removing tails. Make a shallow cut lengthwise down the backs of the shrimp; wash out vein. In a 10-inch skillet, heat oil over medium heat. Cook shrimp and remaining ingredients except cheese in oil for 2 to 3 minutes, stirring frequently, until the shrimp are pink and firm; remove from heat. Sprinkle with cheese. Serve over fettuccini noodles, prepared according to package directions.
