Smooth Broccoli Soup

2 cups chicken stock
1 cup water
3 cups chopped broccoli; 1 pound
1/4 cup broken spaghetti
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon white pepper
1 cup skim milk
chopped sweet red pepper

Use cauliflower in place of broccoli for a change of taste and color. The calorie count will be about the same. In large saucepan, combine stock and water. Bring mixture to boil; add broccoli and spaghetti. Cook for 12 minutes or until spaghetti is tender. Season with salt, nutmeg and pepper. Transfer mixture to blender or food processor; purée until smooth. Add milk; process for 2 seconds. Transfer mixture back to saucepan and cook until heated through. Pour into warmed soup bowls and serve. Garnish with sweet pepper. about 75 calories per serving
