Salmon Fillets With Mango salmon 4 6-ounce salmon fillets (skin on) 3 tablespoons dry sherry 1 teaspoon grated lime zest 2 tablespoons lime Juice 1 tablespoon soy sauce 2 teaspoons vegetable oil 3 tablespoons chopped green onion 1 1/2 teaspoons grated fresh ginger 1 clove garlic; chopped fine 1 ripe mango; peeled, cut into wedges Place salmon fillets, skin side down, in greased 13- x 9-inch baking dish. In small bowl, whisk together sherry, lime zest and juice, soy sauce, oil, green onion, ginger and garlic; pour over fillets. Bake, uncovered, at 450ºF for about 10 minutes per inch of thickness or until fish flakes easily when tested with a fork. Serve with mango wedges. Serve with white rice and steamed or stir-fried snow peas.
