Olive Oil Crust (2): Spinach Feta Pie (Spinakopita) pastry 4 cups packed fresh spinach; finely chopped 2 cups leeks; finely chopped 1 cup feta cheese; crumbled 1 cup mozzarella cheese; shredded 3 tablespoons currants; or 3 tablespoons raisins 2 tablespoons fresh dill; chopped, or 1 teaspoon dried dill weed 2 tablespoons fresh parsley; chopped 1/2 teaspoon pepper 2 eggs 1 teaspoon cornstarch 8 sheets olive oil crust ----GLAZE---- 1 egg 1 tablespoon milk In bowl, combine spinach, leeks, feta and mozzarella cheeses, currants, dill, parsley and pepper; mix well. Beat eggs with cornstarch; stir into spinach mixture until thoroughly mixed. Place 1 of the sheets of crust on lightly floured surface. Spoon about 1 cup spinach mixture onto lower half; fold upper half over and pinch edges to seal. Place on greased baking sheet. Repeat to make 8 pies. Glaze: Beat egg with milk; brush over top of pies. Bake in 400şF oven for 20 to 22 minutes or until golden brown and crusty.
