Cheesy Dijon Chicken Chunks salads 1/4 cup butter 1 clove garlic; minced 1 tablespoon Dijon mustard 1 tablespoon lemon juice salt and freshly ground pepper; to taste 6 skinless boneless chicken breast; cut in 1-inch pieces 1/4 cup fine dry breadcrumbs 1/4 cup freshly grated Parmesan cheese; to taste 2 tablespoons finely chopped fresh parsley These appetizers will be appreciated by any hostess. The recipe is a no fuss, time-saving gem with delicious results. In large skillet over medium-high heat, melt butter; stir in garlic, mustard, lemon juice, and salt and pepper to taste. Add chicken and sauté, stirring occasionally, for 5 to 10 minutes or just until chicken is tender and cooked through. In small bowl, mix together bread crumbs, cheese and parsley; sprinkle over chicken and toss to coat. Transfer to serving dish and serve warm; pass cocktail picks.
