Beer Dressing For Potato Salad

1/2 cup diced onions
3 tablespoons salad oil
2 tablespoons flour
1 1/2 teaspoons salt
good shake pepper
2 teaspoons sugar
1 1/2 cups beer
1/4 cup cider vinegar

Sauté onions in oil for 10 minutes, stirring frequently. Blend in flour, salt, pepper and sugar. Next add beer and vinegar, stirring constantly to the boiling point. Cook over low heat for 5 minutes. Pour over chopped, cooked potatoes when it has cooled slightly. Serve with cold meats and salads -- and perfect the meal with glasses of beautiful beer. The next time you will probably need to make double the quantity .
