Lime Rice With Onion

rice

2 cups water
1/2 teaspoon salt
1 cup long-grain rice
1/2 cup chopped fresh parsley
1/4 cup chopped green onion
2 teaspoons butter
grated rind of 1 lime

In saucepan, bring water and salt to boil; stir in rice, reduce heat to low and simmer, covered, until water is absorbed, about 20 minutes. Remove from heat and let stand for 5 minutes. Stir in parsley, onion, butter and lime rind. Serve.
