Sesame-Spiced Oven-Fried Potatoes potatoes 4 medium potatoes (or 2 sweet potatoes); 1 1/2 pounds 1 tablespoon vegetable oil 2 tablespoons sesame seeds 1/2 teaspoon (each) paprika and crushed fennel seeds 1/4 teaspoon (each) cayenne and salt For extra fibre and flavour leave the skin on the regular potatoes. Peel sweet potatoes; peel regular potatoes only if skin is tough or blemished. Cut lengthwise into eighths. Place in bowl and toss with oil. Combine sesame seeds, paprika, fennel seeds and cayenne; sprinkle over potatoes and toss to mix. Spread on baking sheet. Bake in 400ºF oven, turning once, for 40 minutes for sweet potatoes and 60 minutes for regular potatoes - or until tender.
