Positively Pizza Baked Potato

potatoes

1 baking potato; about 6 ounces
pinch (each) salt and pepper
----POSITIVELY PIZZA TOPPING----
1 tablespoon tomato sauce
1 teaspoon chopped pepperoni
1 teaspoon chopped sweet green pepper
pinch dried oregano
2 tablespoons shredded mozzarella cheese

Bake extra potatoes for dinner one night, then the next day after school, assemble this snackin' spud for reheating in the microwave. Scrub potato. Prick skin several times with fork or sharp knife. Microwave at High for 3-1/2 to 4-1/2 minutes or until soft. (Or bake in 400°F oven for 1 hour.) Cut potato in half lengthwise. Sprinkle with salt and pepper. Using fork or sharp knife, loosen pulp in shell. Positively Pizza Topping: Top potato with tomato sauce, pepperoni, green pepper and oregano. Sprinkle with cheese. Microwave at High for 30 to 60 seconds or until cheese is melted. VARIATIONS Make-It-Mexican Baked Potato: Omit Positively Pizza Topping. Top potato with 2 tablespoons salsa and 1 tablespoon corn kernels. Sprinkle with 2 tablespoons shredded Monterey Jack cheese. Heat as above. Makes 1 serving.
