Plum Glazed Pork Chops pork 4 boneless pork chops; 1 pound 1/4 teaspoon (each) salt and pepper 1 tablespoon oil 1 sweet red or green pepper; chopped 1 onion; chopped 1/2 teaspoon ground ginger 2/3 cup plum sauce 2 tablespoons orange juice 1/4 teaspoon hot pepper sauce Trim fat from chops; sprinkle all over with salt and pepper. In large nonstick skillet; heat oil over medium-high heat; cook chops for about 3 minutes per side or until browned, juices run clear when pork is pierced and just a hint of pink remains. Transfer to plate; cover and keep warm. Reduce heat to medium. Add red pepper, onion and ginger to pan; cook, stirring occasionally, for about 5 minutes or until onion is softened. Stir in plum sauce, orange juice and hot pepper sauce. Return chops and any juices to pan; cook, turning to coat, for about 2 minutes or until heated through.
