Hot Hoisin Ribs pork 4 pounds pork side or back ribs 1/2 cup hoisin sauce 1/4 cup granulated sugar 2 tablespoons orange rind; coarse grated 1 tablespoon dry sherry 1 tablespoon oyster sauce 2 tablespoons Asian chili paste 1/4 teaspoon five spice seasoning 2 cloves garlic; minced Trim excess fat from ribs. Cut ribs into serving pieces; arrange in large glass baking dish. Combine hoisin sauce, sugar, orange rind, oyster sauce, chili paste, five spice seasoning and garlic. Spread evenly over ribs. Cover and marinate in refrigerator for at least 4 hours and up to 24 hours. Let stand at room temperature for 30 minutes. Reserving any marinade, place ribs on rack in large shallow foil-lined roasting pan. Roast in 400 F oven for 10 minutes. Reduce heat to 375 F and roast, turning once and basting with any marinade, for about 1 hour or until pork is tender. Total fat: 168 g.
