Cider-Baked Ribs pork 6 pounds spare ribs 2 cups apple cider or juice 1/2 cup Dijon mustard 1/4 cup liquid honey 1/4 cup lemon juice 2 tablespoons Worcestershire sauce 1/2 teaspoon pepper dash hot pepper sauce 4 Golden Delicious apples Cut ribs into 3-rib pieces, trimming off excess fat. Place in shallow roasting or broiler pan. Combine 1/4 cup of the cider, the mustard, honey, lemon juice, Worcestershire sauce, pepper and hot pepper sauce; brush half of mixture over ribs. Pour half of remaining cider into pan. Bake in 375°F oven for 1-1/2 hours, basting occasionally with remaining mustard mixture, turning once and adding remaining cider as it evaporates. Meanwhile, core apples; cut each into 6 pieces. Arrange around ribs; baste with pan juices. Seal pan with foil; bake for 20 minutes or until apples are tender. (Recipe can be prepared to this point and refrigerated, covered, for up to 1 day. Reheat, covered in 350° oven for 30 minutes.) Transfer ribs and apples to warm platter. Strain cooking juices into bowl; skim off fat. Pour juices over ribs and apples.
