Cashew Pork Stir-Fry pork, stirfry - pork 3/4 pound pork tenderloin; cut into slices 1 tablespoon soy sauce 2 teaspoons oil 1 medium-size green pepper; chunked 1 onion; chunked 1 stalk celery; sliced diagonally 1/2 pound mushrooms; sliced 2 medium-size fresh tomatoes; chunked 1/4 cup stir-fry sauce 1/4 cup roasted cashews Mix pork and soy sauce; set aside 15 to 20 minutes. Heat 1 teaspoon oil in non-stick wok over medium-high heat. Add pork and stir- fry 2 minutes; remove. Heat remaining oil in wok over high heat. Add green pepper, onion and celery; stir-fry 2 minutes. Add mushrooms and stir-fry 3 minutes longer. Add pork, tomatoes and stir-fry sauce. Cook, stirring, only until tomatoes are heated through. Remove from heat and sprinkle with cashews.
