Mediterranean Pie

1/4 cup olive oil
1 small onion; finely chopped
4 peeled and seeded tomatoes; chopped
1/2 cup dry white wine or chicken stock
1/2 teaspoon dried oregano
1/4 teaspoon freshly ground pepper
pinch crushed dried chilies
1 pound peeled and deveined shrimp; coarsely chopped
1/2 cup coarsely chopped pitted black olive
2 tablespoons chopped fresh parsley
3/4 cup (approx) unsalted butter; melted
16 sheets phyllo pastry; about 2/3 pound
1/2 pound feta cheese; rinsed, drained, crumbled

In large skillet, heat oil over medium heat; cook onion until softened, about 3 minutes. Add tomatoes, wine, oregano, pepper and chilies; cook, uncovered, for about 10 minutes or until sauce has thickened. Add shrimp and cook for 3 minutes or until shrimp turn pink. Remove from heat and stir in olives and parsley. Let cool. Brush bottom and sides of 13- x 9-inch baking dish with some of the butter. Place stack of phyllo sheets on table; cover with waxed paper and damp tea towel to keep pastry from drying out. Working quickly, line prepared dish with 1 sheet of the phyllo, pressing firmly into corners and up sides of dish. Brush with about 2 teaspoons butter, being sure to coat corners and sides. Repeat with 7 more sheets of the phyllo, brushing each with some of the butter. Spoon shrimp mixture evenly into dish; sprinkle with fete Top with 1 sheet of the phyllo and brush with some of the butter. Repeat with remaining phyllo sheets, brushing each with some of the butter. Trim excess pastry. Bake in 300°F oven brushing occasionally with remaining butter if pastry begins to dry out, for about 45 minutes or until pastry is puffy, crisp and golden. Cut into squares to serve. Note: Pie can be cooled, covered and refrigerated for up to 24 hours. Let stand at room temperature for 30 minutes before brushing with 1 to 2 tablespoons melted butter and reheat, uncovered, in 300°F oven for 20 to 30 minutes or until heated through.
