Tuna Burgers

fish

2 eggs
1/3 cup dry bread crumbs
1 tablespoon chopped fresh dill; or
1 teaspoon dried dill
1 tablespoon prepared horseradish
2 tablespoons Dijon mustard
1/4 teaspoon pepper
pinch salt
2 can (6 oz) water-packed tuna
2 green onions; minced
1 stalk celery; chopped
1 tablespoon vegetable oil
alfalfa sprouts
4 whole wheat hamburger buns

In bowl, lightly beat eggs; mix in bread crumbs, dill, horseradish, mustard, pepper, salt. Drain tuna; mix into bowl along with green onions and celery; shape into four 1/2 inch patties. In nonstick skillet, heat oil over medium heat; cook patties, turning once, for about 10 minutes or until golden brown and set. Sandwich along with alfalfa sprouts in buns. Per serving: about 360 calories, 9 g fat, high source of fibre, 32 g protein, 40 g carbohydrate, good source of iron.
