Salmon with Ginger and Black Bean Sauce fish 4 salmon steaks 1 1/2 inch slice ginger; finely chopped 2 tablespoons oil 2 cloves garlic; minced 3 green onions; chopped 1 tablespoon rice wine 2 tablespoons black bean sauce 1/2 cup chicken broth; mixed with 1 tablespoon soy sauce; and 4 teaspoons cornstarch Place salmon steaks in single layer in casserole; squeeze juice from ginger over steaks using a garlic press. Heat oil in skillet; add garlic and green onions. Stir-fry until fragrant; about 1 minute; add remaining ingredients. Bring to boil; cook 1 minute. Pour sauce over salmon. Cover and bake at 450 F until fish flakes easily; about 10 to 15 minutes. Serve with rice.
