Lightened-Up Macaroni And Cheese pasta, cheese 3 cups macaroni 2 tablespoons butter 1 8-ounce onion; chopped 3 tablespoons all-purpose flour 1 teaspoon dry mustard 1/8 teaspoon cayenne pepper; or to taste 2 1/4 cups milk 1 cup shredded skim-milk cheese 1 cup shredded light Cheddar-style cheese 1 cup low-fat cottage cheese 1/8 teaspoon salt; or to taste 1/8 teaspoon pepper; or to taste ----Topping---- 1/2 cup fresh bread crumbs 2 tablespoons freshly grated Parmesan 1 tablespoon butter; melted In large pot of boiling salted water, cook macaroni for 8 to 10 minutes or until tender but firm; drain well and return to pot. Meanwhile, in saucepan, melt butter over medium heat; cook onion for 3 to 5 minutes or until softened. Stir in flour, mustard and cayenne. Gradually whisk in milk and bring to boil; cook, whisking constantly, until slightly thickened. Remove from heat; stir in skim-milk and Cheddar-style cheeses until melted. Stir in cottage cheese; season with salt and pepper to taste. Stir into macaroni. Transfer to 13- x 9-inch baking dish. Topping: Combine bread crumbs, Parmesan and butter; sprinkle over macaroni. Bake in 350°F oven for 15 minutes or until golden brown on top and heated through.
