Nutty Orange Couscous

pasta

1/4 cup chopped pecans
2 teaspoons vegetable oil
1 onion; chopped
1/4 teaspoon dried thyme
1 cup chicken stock
1 teaspoon grated orange rind
1/2 cup orange juice
1/4 teaspoon (each) salt and pepper
1 cup couscous

In saucepan, toast pecans over medium heat, stirring, for 5 minutes or until golden. Remove from pan. Add oil; cook onion and thyme for 3 minutes or until softened. Add chicken stock, orange rind and juice, salt and pepper; bring to boil. Stir in couscous; cover and remove from heat. Let stand for 5 minutes; fluff with fork. Sprinkle with pecans. Makes 4 servings.
