Spicy Spareribs

pork, microwave

2 pounds pork spareribs
1 cup ketchup
1/3 cup beef stock
1 tablespoon white vinegar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground pepper
2 drops (approx) hot pepper sauce
pinch (each) ground cloves and cayenne pepper

Cut ribs into single-rib pieces and place in 12-cup dish, meatier portions to outside, overlapping ribs slightly as needed. Cover with lid or plastic wrap, turning back corner to vent. Microwave at High for 5 minutes, then microwave at Medium-Low (50%) for 12 to 15 minutes or until meat is no longer pink, rearranging ribs once during cooking. Drain well. Rearrange and turn ribs over so least cooked pieces are exposed. Set aside. In 4-cup dish, combine ketchup, stock, vinegar, lemon juice, Worcestershire sauce, mustard, cumin, pepper, hot pepper sauce, cloves and cayenne pepper. Microwave at High for 3 to 4 minutes or until boiling, stirring once during cooking. Be sure to pour off all fat from the spareribs before adding the sauce. Drizzle sauce over ribs, turning each to coat all over. Cover and microwave at Low (30%) for 25 to 30 minutes or until ribs are fork tender, rotating dish twice during cooking. Serve with hot fluffy rice.
