Cod Steaks Provencal fish, microwave 1 tablespoon olive oil 1 onion; chopped 2 cloves garlic; minced 1 can (19 oz) tomatoes; drained, seeded, diced 2 tablespoons chopped fresh parsley 1 tablespoon lemon juice 1 teaspoon dried tarragon pinch (each) salt and pepper 1 1/2 pounds cod or halibut steak In 4-cup microwaveable measure, combine oil, onion and garlic; microwave, uncovered, at High for 2 to 4 minutes or until onion is softened, stirring once. Add tomatoes to onion mixture along with parsley, lemon juice, tarragon, salt and pepper; stir well. Microwave, uncovered, at High for 4 to 6 minutes or until boiling vigorously and slightly thickened, stirring once. Cut fish into serving-size pieces; arrange in 9-inch microwaveable pie plate with thicker portions toward edge. Spoon tomato mixture evenly over fish. Cover with waxed or parchment paper; microwave at High for 6 to 8 minutes or until fish is opaque and flakes easily when tested with fork, rotating dish twice. Let stand, covered, for 3 minutes.
