Lamb Chops With Fresh Mint And Jalapeno Pepper

8 loin lamb chops; about 1-inch thick
3 tablespoons olive oil
2 tablespoons chopped fresh mint
2 large cloves garlic; chopped fine
1 small jalapeńo pepper; seeded and chopped fine
1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper

Trim excess fat from lamb chops. In small bowl, combine oil, mint, garlic, jalapeno pepper, salt, cumin and pepper. Spread mint mixture over both sides of chops. Place on lightly greased broiler pan and let stand for 5 minutes. Broil chops for about 8 minutes or until cooked, turning once. Serve with nugget potatoes when in season, or rice, and either steamed green beans or snow peas..
