Grilled Lamb Kebabs bbq, lamb 2 pounds lamb cubes; cut from a leg of lamb 1/4 cup Spicy Lemon Marinade 2 green onions; finely chopped 2 tablespoons chopped coriander 1/4 teaspoon salt salt and pepper ----SPICY LEMON MARINADE---- 3/8 cup olive oil 2 tablespoons lemon juice 1/2 teaspoon crushed garlic 1/2 teaspoon cumin pinch cayenne 1/2 teaspoon dried oregano; or 1 teaspoon fresh oregano Spicy Lemon Marinade: Whisk together olive oil, lemon juice, garlic, cumin, cayenne and oregano in a small bowl (or shake in a covered jar) until well combined. Toss meat with marinade, green onions and coriander. Cover and marinate several hours or overnight in the refrigerator. Soak 8 to 10 wooden skewers in water for 30 minutes. Preheat barbecue to medium-high. Sprinkle salt into marinade just before cooking; toss. Remove meat from marinade and thread on skewers. Grill, turning every 5 minutes, until lamb is browned on the outside and tender, pink and juicy within, 10 to 15 minutes. Season with salt and pepper to taste. Remove from skewers and serve hot.
