Rice Pilaf With Ham rice, ham 1 tablespoon vegetable oil 1 (8 oz) onion; chopped 3 (2 oz) carrots; sliced 2 ribs (3 oz) celery; diced 1 (6 oz) sweet green pepper; chopped 10 ounces cubed ham; about 2 cups 1/2 cup frozen corn kernels 1/2 cup apple cider or juice 4 teaspoons dry mustard 1 teaspoon cider vinegar 1/4 teaspoon pepper 1/8 teaspoon hot pepper flakes; or to taste 4 cups cooked rice 2/3 cup shredded part-skim mozzarella chees 1/4 cup chopped fresh parsley In wok or large skillet, heat oil over medium-high heat; cook onion, stirring, for 2 minutes. Stir in carrots, celery, green pepper, ham, corn, apple cider, mustard, vinegar, pepper and hot pepper flakes; cover and cook, stirring occasionally, for 6 minutes or just until vegetables are tender-crisp. Add rice; cook, stirring, for 2 minutes or until most of the liquid is absorbed. Remove from heat; stir in cheese and parsley.
