Tzatziki appetizers, greek 1 1/2 cups plain low-fat yogurt 1/2 cup finely chopped cucumber; (unpeeled) 1/2 teaspoon salt 1 clove garlic; minced 1 teaspoon lemon juice Place yogurt in cheesecloth-lined sieve set over bowl; cover and let drain in refrigerator for 4 hours or until reduced to 3/4 cup. In bowl, sprinkle cucumber with salt; let stand for 20 minutes. Drain and place in sieve; press out excess moisture. In bowl, combine yogurt, cucumber, garlic and lemon juice.
