Healthy Fruit Muffins

1 2/3 cups all-purpose flour
1 cup large-flake rolled oats; not instant
1 cup chopped mixed dried fruit
2/3 cup skim milk powder
1/2 cup natural bran
1/2 cup granulated sugar
2 tablespoons flax seeds
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups plain yogurt
2 eggs
1/3 cup orange juice
1/3 cup vegetable oil
2 teaspoons vanilla
----TOPPING----
2 tablespoons large-flake rolled oats; not instant

In large bowl, combine flour, oats, dried fruit, skim milk powder, bran, sugar, flax seeds, baking powder, baking soda and salt. In separate bowl, whisk together yogurt, eggs, orange juice, oil and vanilla; pour over dry ingredients and stir just until moistened. Spoon into 12 large greased or paper-lined muffin cups. TOPPING: Sprinkle with oats. Bake in centre of 400°F oven for about 20 minutes or until tops are firm to the touch. Let cool in pan on rack for 5 minutes. Turn out onto rack and let cool completely.
